Multiple Built-in Safety Features
1. Pressure-Limiting Valve: If the pressure inside exceeds the limit, the pressure-limiting valve will release the pressure.
2. Lid Lock Protection: Ensures that the lid fits correctly. Pressure will not build up if the lid is not fully locked.
3. Anti-block Filter: Prevents food blockage around the exhausting valve and ensures smooth pressure release.
4. Float Valve Protection: Pressure will not increase if the lid is not fully closed or locked properly.
5. Open/Close Markings: The open / close markings for the lid identify when the lid is in the locked or unlocked position. Appliance will not operate in the open position.
6. Temperature Control: This sensor controls the temperature of the inner pot to avoid exceeding the limit.
7. Pressure Control: The flexible gasket and pressure switch controls the pressure continuously.
8. Fuse Protection: If the temperature exceeds the limit, the fuse will switch off the power.
9. Temperature Sensor: If the inner pot is empty or the temperature exceeds the limit, the sensor will switch off the power.
10. Automatic Pressure Release: If all other safety features fail and the pressure reaches a level that exceeds the limit, it will be released automatically from an area between the gasket and inner pot.

We've used it strictly for pressure canning and water bath canning only & it hasn't skipped a beat! This pressure cooker/canner is so simple to use & it cuts so much mess, hassle, and time from canning. Some people have complained that it spits out an error code after 2 or 3 sessions but we were able to use it non-stop all day (maybe 10 sessions or more) and did not have a single problem. It is much larger that I anticipated from the pictures on the ad, but that is a good thing. A lot can fit in it at once, and cuts the process time in half or better. Not only does using this unit free up the stove for food prep, but it eliminates the chance of boiling water accidents, and keeps the temperature and humidity down in my home versus stovetop canning. The built-in safety features put you at ease about pressure cooking/canning, from the auto-locking lid under pressure to the little steam-condensation catcher on the back-Carey thought of everything! It's a MUST HAVE appliance even if you only plan to use it once or twice a year.
EDIT: I'd like to also add that I saw a review on here regarding it being messy when you pressure can, and even after using it all day we did NOT have a mess like they had pictured in their review. During processing it hisses out steam from the bypass pressure vent and little water droplets sometimes build up and out a little bit, but none that make it out onto the lid or the countertop. There is a small clear capture canister mounted to the back of the lid. After all the pressure canning and canning we did in that picture, it didn't even fill all the way up.
UPDATE: We've had this pressure cooker/canner for over 6 months now and we've gotten to use it for a variety of things. We've made bulk pressure-cooked chicken breast from frozen to completion in less than 10 minutes. We've made the most amazing pulled pork we've ever had in this thing. My only regret is not buying one of these years ago!
Update 2: Now owned for over 2 years problem-free! We use it to can annually and on and off for different recipes about monthly. Lately we pressure cook 3 slabs of baby back ribs for about 40 minutes then toss them on our smoker grill for about 20 minutes, and finally lather them in BBQ sauce for another 10 or so over open flame for the best ribs ever!
